You may have heard that it is always a safer choice to use a cooking oil high smoke point. But do you know what the smoke point is? Smoke point is also referred to as the burning point, a certain temperature at which the oil starts to smoke. What is the clarified butter smoke point? Ghee is free from milk solids which make it more shelf-stable giving it a high smoke point of 250° C or 485° F. This type of temperature is perfect for high heat cooking. As a result your food will not get burnt easily.

On the other side, low smoke point oils like olive oil, or butter are not safe for the high temperature cooking. Smoking is evidence that the fat is breaking down and creates an odd smell and flavor. When you are doing high temperature cooking like deep frying, sauteing, baking or grilling, you must choose your oil carefully. The nutritional value of the oil also matters. Organic ghee offers a higher smoke point that regular ghee.

Ghee or clarified butter smoke point has always been an advantage for cooking. Additionally, this is considered to be a healthy substitute to butter that has enough vitamins and nutrients. Most of the food that we cook needs a temperature between 350° F to 450° F, so it’s best to choose an oil with a smoke point above 400° F.
